SWEET WHITE of the year WINNER THE LE CORDON BLEU TROPHY Longview Epitome Adelaide Hills Late Harvest Riesling 2018 WINEMAKER: Michael Sykes & Peter Saturno COLOUR, BOUQUET, PALATE: The wine has a pristine pale colour; the aroma has slight notes of golden delicious apple and orange blossom. A refreshing palate of peach and ripe citrus is followed by a wonderfully clean finish. Flavours in the bottle will continue to develop favourably over the next 3-5 years, gaining richness & complexity. FOOD SUGGESTIONS: Vanilla bean panacotta, foie gras, cheese platters. CELLARING: 30+ years. VITICULTURE: Spring rainfall was below average which helped disease control and provided ideal conditions for the flowering period. Dry conditions through early summer helped us control vine vigour resulting in balanced canopies. From veraison through to harvest, the weather was ideal with minimal moisture and cool nights resulting in exceptional fruit flavour development and acid retention. Exceptionally dry conditions towards the end of vintage minimised disease pressure allowing for perfect ripening. VINIFICATION & MATURATION: Initially treated in the vineyard as high-end dry riesling to ensure good acid levels and early flavour development, the grapes are then dried on the vine and handpicked very late in the season. After crushing/ destemming it is cool fermented using sugar tolerant yeasts in stainless steel. The fermentation process for late harvest wines is slow due to the increased concentration in the initial must. The wine is then gently fined and filtered before bottling. A high strength neutral spirit is then added to arrest the fermentation and fortify to 17.5% v/v alcohol. The wine is then transferred into casks and barrels to slowly mature for many years. In blending, a range of vintages are used, the older wines giving intensely concentrated luscious flavours and aged complexity and the younger wines imparting the fresh fruit character.
