Members and their families enjoyed a festive afternoon filled with delicious food and plenty of activities for the children including a face painter and Christmas carnival games. ROAST RACK OF PORKwith Onion Stuffing, Baked Apple, Roast Potatoes, Savoy Cabbage and Bacon By Michael Sargent, Head Chef120londongolf.co.uk
121INGREDIENTS 2kg rack of Pork (chined, French trimmed and skin scored)1.5kg Maris Piper Potatoes (peeled and cut into chunks) 8 small apples (eg Braeburns)50g Butter Large bunch of sage (leaves picked)1 small savoy cabbage (shredded)240 g streaky bacon (cut into lardons)FOR THE STUFFING 25g Butter 1 small onion (finely chopped) Small handful of finely chopped sage leaves Large handful of parsley, roughly chopped 50 g sausage meat 50g breadcrumbs 1 spring onion Zest of 1 lemon Firstly, make the stuffing. Heat the butter in a pan and add the finely chopped onion, cook for 10 minutes until soft and golden. Add the onion to the bowl of all the other ingredients and season with lots of black pepper. Scrunch altogether with your hands and get ready to prep the pork. To do this you will need a long-bladed knife. Create a pocket between the eye of the meat and the bones and then turn the knife to open the cavity (you might need to go in at both ends of the pork to do this.) Using your fingers, push as much of the stuffing into the cavity as you possibly can. Heat the oven to 240C/220 Fan/Gas mark 9. Put the pork rack into a shallow roasting tin, season with salt and liberally apply sunflower oil, put the pork into the oven for 20 minutes. Lower the heat of the oven to 200C/180 Fan/ Gas mark 6 and continue cooking for 1 hour, basting the pork occasionally with the fat in the bottom of the tin. While cooking the pork, par boil the Maris Piper potato chunks ready for roasting. Put into a pan of cold, salted water, bring to a boil and simmer for 10 minutes or until potatoes are cooked but not falling apart and then drain. After the pork has been cooking for the hour and 20 minutes baste one more time, remove the pork from the tin, pour the fat from the pork onto the potatoes. Turn the potatoes with a spatula to make sure they are completely covered. Return the pork and the potatoes to the oven for a further 40 minutes by which time the potatoes should be turning golden and the pork skin should have crackled. Transfer the pork to a board and leave to rest for 20 minutes, uncovered. While the Pork is resting score a line around the middle of each apple and place them into the pork tin. Dot with half the butter and roast for 20 minutes or until soft, by which time the potatoes should be golden and ready. Also, while the apples are cooking blanch the shredded savoy cabbage in a pan of boiling salted water and cook the bacon lardons in a pan with some oil. Once both steps are complete add the savoy cabbage to the bacon lardons and heat through. Heat the remaining butter in a pan until sizzling and fry the sage leaves, turning until crisp. Transfer onto some kitchen towel and drain off excess butter. To serve, arrange the potatoes and apples around a bed of the savoy cabbage and bacon. Cut the pork rack into single chops (with one bone on each chop) and place on top of the cabbage. Scatter with crispy sage leaves. londongolf.co.uk
