BY MAGGIE GRISWOLD I n a world where pretty much anyone can go viral on social media as long as they have a phone, inter- net access, and a good/ bad/weird/dramatic idea, it’s become hard out there for A-listers. Well, obviously not, like, truly hard, but a bit more difficult to compete with career influencers for attention (not to mention for lucrative endorsement deals). Their solution? The expertly taken, looks- candid-but-is-almost-certainly-not street- style photo. Yes, I mean those paparazzi shots featuring your favorite celebrity striding from grocery store to car or from car to coffee shop in an enviable outfit. You may have saved a few to Pinterest when hoard- ing future wardrobe inspo. (I definitely *will* wear a fuzzy jacket and crop top combo one day.) You may have marveled at said star’s cool off-duty style, their abil- ity to just “throw something together.” You and everyone else. “A paparazzi-captured image is almost automatically more eye-catching and viral than an Instagram post,” says celebrity photographer Miles “Diggzy” Diggs, who’s snapped everyone from Rihanna and Kendall to the Hadid sisters. “People tend to be drawn toward the voyeuristic element.” There’s something intoxicating about seeing a Very Famous Person when they’re not posing for an official shot. For those of us constantly craving more access to stars, the perceived intimacy these photos impart is practically addictive. Plus, there’s the added excitement that comes with wondering where they’re going and what they’ll be doing in their chic clothes. The mystery is half the allure. Except (and sorry, it kinda crushed me too) there’s not actually much that’s spontaneous about celebrity candids. Or should I say plandids? Not unlike the long con of the no-makeup makeup look, a lot more strategizing goes into these ephemeral moments than it might appear. Los Angeles photographer Tim Regas often gets requests to take photos of stars in specific settings—usually promoting a street-style outfit. Although it’s generally celebrities’ stylists or managers making contact with Regas, the celebs themselves are ultimately calling the (literal and figu- rative) shots for what is a surprisingly large team effort. Getting just one casually- out-and-about pic can involve a stylist, personal or corporate PR, a manager, friends, and, finally, a venue. “They all play a role in getting a photographer and celeb connected for an image,” he says. BITES No-Rules Recipe 2 40 Cosmopolitan I S S U E 4 Once upon a time (aka before you read this story), common leftovers were one of two things: an unsatisfying, begrudgingly eaten lunch or fuzzy-mold-coated fridge furniture. And now, dear reader, they are this—an entirely new, taste- bud-tantalizing meal. See for yourself. 1. Recycled-Bagel Strata Day(s)-old bagels won’t get soggy in this savory bread-pudding-like breakfast casserole (feast your eyes on the previous page). Slice 3 or 4 bagels into bite-size pieces and coat them with a few tablespoons of mayonnaise. In a separate bowl, whisk 8 or 9 eggs with a few cups of milk and anything else you want. Yes, anything—shredded cheese, chives, precooked bacon, chopped veggies, everything bagel seasoning, whatever. Pour the bagel pieces into a greased casserole dish and douse them with your eggy concoction. Cover and refrigerate anywhere from 1 hour to overnight, and when you’re ready, bake at 350 degrees for 50 minutes, or until that craggy top looks brown and toasty. 3 2. Fritterfied Pasta Chop leftover noodles (sauce included) into small pieces and, in a bowl, mix them with a few eggs and enough bread crumbs and grated cheese to make it all stick together; stir in some salt and pepper. Heat a few tablespoons of olive oil in a pan. Scoop up big clumps of your pasta mixture and flatten each with your hands into a pancake- ish shape before frying it in the hot oil for about 1 to 2 minutes per side, or until crispy. Let them dry on a towel, then sprinkle with Parmesan and dip in marinara or make a fritter sandwich with a melty, cheesy middle. 3. “Can I Have Your Crust?” Croutons First, trim away the bite marks from any would- have-otherwise-been-discarded pizza crusts or simply cut the ends off any uneaten slices. Next, tear the crusts into small cubes and add them to a hot pan with olive oil and a clove of crushed garlic, tossing until the bread turns crispy and brown. Sprinkle in some salt and Italian herbs, give them one last shake in the pan, and set your new croutons aside to cool. Use them to top salads or soups, or save ’em for later—unlike regular old pizza, these guys will last a few weeks when stored in a sealed bag in the freezer.

Before you do anything else, strain out any liquid that collects in the bowl and put it in a separate container. You can mix it with rice to eat on the side or combine it with cilantro, chopped onions, and lime juice to make a vinaigrette. 5. Back to the bowl: Cut up the now-cooked chicken into smaller chunks. Then comes cheese. Sprinkle a generous amount of grated mozzarella as well as either pepper Jack or cheddar (or both, why not?) on top of the chicken. Pop the bowl back in the microwave for another minute, or until the cheese is just melted. 6. Serve with rice, beans, and tortillas, and feel free to get creative with the toppings.
