I Sapo Abbazia Collemedio Hotel & Resort Ingredients for 4 people 400gr of Rigatoni 2 dl of extra virgin olive oil 1 white onion 100 gr of lard from the pig’s cheek 1 glass of white wine 200 gr of tomato sauce Salt, chilli pepper and parsley(to taste)   Preparing the meal Slice thinly the onion and the lard and let them brown in a big pan with extra virgin olive oil; Add white wine; As soon as the wine is evaporated add the chilli pepper and the tomato sauce; Let it boil on low flame for 10 minutes and add the chopped parsley; Cook the pasta in a pot with a lot of water, adding the salt when it starts to boil; Drain the pasta when it’s slightly underdone and pour it into the pan where the sauce is; At the end add some pecorino cheese or some grated parmesan.

Nel corso del XV secolo i vincoli di soggezione agli Stati della Chiesasi allentarono nuovamente, grazie anche all’affermarsi sul territorio di alcune signorie, l’ultimadelle quali fu quella della famiglia Baglioni.Nel 1531 su tutti i territori pontifici venne imposta una tassa sul sale; tale tassa causò un mal-contento popolare che i Baglioni tentarono di cavalcare nel tentativo di affrancarsi comple-tamente dal dominio papale. Verso la fine del 1539 il papa Paolo III, in un periodo di estremacarestia, durante una sua visita alla città di Perugia manifestò l’intenzione di richiedere l’au-mento del prezzo del sale (prezzo-fisso), già concordato con le autonomie comunali in regimedi monopolio delle saline pontificie, nella misura di tre quattrini per libbra.The Salt War of 1540 was a result of an insurrection by the city of Perugia against the Papal Sta-tes during the pontificate of Pope Paul III (Alessandro Farnese). The principal result was the cityof Perugia’s definitive subordination to papal control.Perugia had been a free commune until 1370 when it was incorporated into the Papal States.The Perugian elite continued to enjoy a sort of semi-autonomy, including several privileges liketrial by a local (not papal-appointed) judge and freedom from paying any taxes on salt, thenan important product for preserving food.Beginning in the late 1400s successive popes attempted to reign in Perugian autonomy, de-spite resistance by the Perugians. This came to a head after a disastrous harvest in 1539, whichdrove up prices in Perugia and its rural hinterland.[1]In this already economically difficult situation, Pope Paul III decided to levy a new tax on salt forall his subjects. This violated treaties between Perugia and previous popes, treaties which PaulIII had confirmed at the beginning of his pontificate, but Perugian protests were to no avail. ThePerugians decided to rebel but on 4 June 1540 papal troops, led by the pope’s son PierluigiFarnese, forced a surrender.Shortly thereafter an enormous fortress, the Rocca Paolina (Pauline Fortress) was constructedon the plans designed by Antonio and Aristotele da Sangallo. Built not to protect Perugia but,in Julius III’s words “to slow down the burning of the Perugians and get rid of the opportunityto rebel against the Holy See,” the fort was for centuries a symbol of oppressive papal rule.[2]Despite the fact that a later Pope, Julius III, gave the Perugians back a semblance of local rule in1559,[3] the city became part of the Papal States and remained so until Italian unification in 1860.
